Beer Tasting: Clonal Common

With a little over a month in the keg, it's time to test out the Clonal Common! The recipe is intended as a clone of Anchor Steam, in the California Common (steam beer) style. For the sake of comparison, we also picked up a 6-pack of commercial Anchor Steam beer.

Clonal Common
  • The Basics
    • Original gravity = 1.049; final gravity = 1.012; abv = 4.8%; estimated IBU = 35
  • Aroma
    • A sharp woody/minty aroma is prominent (I can only assume this is from the Northern Brewer hops), but not overwhelming. I also pick up a caramel malt aroma in the background. Overall, a clean and pleasant aroma. 
  • Appearance
    • Very clear, but not quite bright, with a medium-gold color. The off-white head is moderately fine and prominent when poured, and sticks around for awhile.
  • Flavor
    • The flavor is nicely balanced between the hops and malt--both have a light and pleasant touch. The bitterness is there, but not over the top. The malt character is a combination of caramel with a bit of toastiness faintly at the rear. There is a very light apple/pear fruitiness on the finish, which is pretty pleasant. 
  • Mouthfeel
    • This is a beer with medium-light body, moderate carbonation, and a medium-dry finish.
  • Would I brew this again?
    • As this beer has matured, it has turned into a very quaffable drink. I wouldn't say this is my favorite style of all time, but it definitely is a very solid recipe and one that I'll brew again. There's not much I'd really change on this.

Anchor Steam
  • The Basics
    • abv = 4.9%; additional data not available
  • Aroma
    • Malty with a caramel-forward note; some fruity esters in the background. No noticeable hops to my nose.
  • Appearance
    • The head is low and moderately-fine, with an off-white color. Head retention is reasonably good. The beer itself is a light amber or medium gold color.
  • Flavor
    • Prominent caramel malt flavor, almost butterscotch-like. The bitterness is subdued and most evident on the finish, rather than being hops-forward. The hops finish is slightly woody.
  • Mouthfeel
    • Medium-light body, with moderately high carbonation. Moderately dry finish.
  • General comments
    • A good beer, and I suppose the epitome of the California Common style, but I like mine a bit better, in terms of its more subdued malt. Both my wife and I agreed that my homebrewed version was more to our tastes. The commercial version was just a little too fruity and cloying.
  • Overall score
    • 6 / 10
Overall Comparisons
The commercial Anchor Steam has a far more prominent caramel aroma and flavor than my homebrew version, which is slightly more prominent in the hops and toastiness of the malt. Anchor Steam itself is slightly more carbonated, too. However, the body, color, and abv match up quite closely. In all, I like my clone quite a bit (and actually prefer it), even if it's very definitely a different beer from the commercial product. I suspect the differences come down to process and ingredients. This has been a fun exploration of a beer style--I'll have to try one of these side-by-side comparisons again with another style!

Beer Tasting: Old Speckled Hen Clone

After a month of keg conditioning, it's time to do a taste test of my Old Speckled Hen clone attempt!

Old Speckled Hen Clone
  • Basics
    • Starting gravity = 1.055; final gravity = 1.011; abv = 5.8%; estimated IBU = 37
  • Appearance
    • The beer is a rich amber color with orangish hints; a modest bit of chill haze. Head is low, creamy and ivory-colored; fairly persistent. 
  • Aroma
    • Light caramel notes, with a bit of maltiness at the core. 
  • Flavor
    • Lightly malty, with a lingering bitterness on the finish. Very hop-centered. Unfortunately, I think the bitterness overrides the maltiness more than I like. This becomes a better beer as it warms up a bit, though. 
  • Mouthfeel
    • In the mouth, the carbonation has an almost creamy effect that is quite nice. The overall body, though, is moderately thin and a bit thinner than I prefer in this type of beer.
  • Would I brew this again?
    • In it current incarnation, probably not. The aroma is delightful, but the bitterness:body ratio is just a too high for my preference. I attribute this primarily to the fairly low mash temperature called for in the recipe, as well as use of the highly attenuative Nottingham yeast strain. If I were to do this again, I would mash higher (maybe 156°), use a different yeast strain (perhaps WLP002), and cut back the bittering addition just a touch. As it is, the current iteration just doesn't hit the round, malty notes that the original OSH does.
  • Overall rating
    • 4/10
Note (19 July 2015): After a few more weeks in the keg, this is a much better beer. The bitterness has rounded out quite a bit, and more balanced relative to the maltiness. So, I would up it to 6/10; brew again, with modifications to the mash temperature and a longer conditioning time (probably 6 or 7 weeks).

Brewing Update: Old Speckled Hen Clone and Red Oak Ale

Tonight I transferred the Old Speckled Hen Clone and the Red Oak Ale (right) out of their respective primary fermenters and into their kegs. Visible fermentation had long since ceased for both.

Old Speckled Hen Clone
This beer had been in the primary fermenter for 10 days, with a reasonably vigorous fermentation. The Nottingham dry ale yeast was a little slow to start relative to the liquid yeasts I've been using lately, and didn't display signs of active fermentation until nearly 24 hours after pitching.

This beer had fermented down to 1.011, and is still a little hazy. I'm expecting that should settle out as the beer chills. The beer has a nice toffee color, and was a little more bitter than I expected. I think it is mainly because I had memories of a much more malt-forward beer; I expect this will come back to the fore as the beer conditions and the yeast continues to drop out. The distinct hops flavor is also probably due to the "spicier" English hops (where I usually have been using American hops in my other beers--I had forgotten how big the difference was!). Starting gravity was 1.055, which works out to 5.8% abv.

The kegged beer (~4.5 gallons) went directly into the keezer, where it is force carbonating under 13.5 psi at 42°.

This beer showed vigorous fermentation within 9 hours of pitching the yeast. I agitated the beer a bit after 3 days (and once or twice more after that), following notes from yeast reviewers that the WLP041 strain tended to slow or stall out if left alone. I figured this was a good idea given the relatively high starting gravity, too (1.070).

The beer had fermented down to 1.015 over the past 18 days, with a gorgeously clear burn umber color (see above picture). This works out to 7.3% abv, one of the "bigger" beers I've done in some time. So far, I'm pretty happy with how it is turning out.

Before sealing up the keg, I added a mesh bag with 2 oz. of Willamette hops pellets for dry hopping. They'll stay in for ~14 days (or maybe even permanently). Tomorrow, I'll add 2 oz. of French oak chips (medium toast), boiled in water and contained in a mesh sack. Those will stay in for just a week before being pulled. I'm leaving the keg at room temperature for at least the next week.

Old Speckled Hen Clone

Time for another new recipe. One of my favorite English beers readily available in the USA is Old Speckled Hen, an ale that falls somewhere in the English Pale Ale / Extra Special Bitter style. A quick internet search turned up this recipe at BIABrewer.info (also available on the BeerSmith recipe cloud). BIABrewer user hashie posted the recipe, so it has their name at the helm. The original recipe was developed for the brew-in-a-bag technique, so I had to modify the grain bill slightly for my own batch sparge setup.

Hashie's Old Speckled Hen
  • 8.25 lbs. Maris Otter pale malt
  • 1 lb. 120° crystal malt
  • 0.90 oz. U.S. Northern Brewer hops pellets (9.9% alpha, 4.6% beta), 60 minute boil
  • 0.50 oz. U.K. Goldings (4.8% alpha), 15 minute boil
  • 0.5 oz. U.K. Goldings (4.8% alpha), 5 minute boil
  • 0.75 lb. Lyle's golden syrup, 5 minute boil
  • 1 tsp. Irish moss, 10 minute boil
  • 1 pkg. Nottingham yeast (Danstar)
Procedure
  • I mashed in with 3 gallons of water at 164°, hitting 151.4° for the mash start. The mash temperature was at 148.5° after 35 minutes and 146° after 60 minutes. 
  • I added 1.3 gallons of water at 180°, which raised the mash bed to 151°. I let this sit for 10 minutes, vorlaufed, and collected 2.75 gallons of wort.
  • Next, I added 3.25 gallons of water at 185°, which raised the mash bed temperature to 168°. I let this sit for 10 minutes, vorlaufed, and collected the rest of the wort.
  • In total, I collected 6.2 gallons of wort with a gravity of 1.043. This works out to ~69% efficiency. It's a little less than my best brews (~75%), so I wonder if that's because I didn't use 5.2 pH stabilizer on this batch.
  • I brought the wort to a boil and added the Northern Brewer hops.
  • After 45 minutes, I added the first dose of Goldings. After 50 minutes, I added the Irish moss. After 55 minutes, I added the second dose of Goldings and the golden syrup. The syrup has a really nice toffee note to it--I am interested to see how that will translate into the overall beer.
  • After 60 minutes, I turned off the flame and chilled the wort down to ~78°.
  • I transferred ~4.9 gallons of wort into the fermenter, with a starting gravity of 1.055.
  • After pitching the yeast, I sealed everything up and put it in the fermentation chamber. Temperature is set for 66°.

Fake Tire Amber Ale 1.2 Update

Having brewed my Fake Tire Amber Ale 1.2 on October 7, I transferred the beer into the secondary fermenter on October 14. Due to various life events, I did not get around to bottling until Monday, November 26. So, the beer sat in the secondary for nearly six weeks. This is longer than I normally go, but the result seems to be an exceptionally clear beer.

Final gravity is 1.010 at 68° F, down from an original gravity of 1.052 at 60° F. Adjusting for temperature, this gives an a.b.v. of 5.5%. The flavor is quite clean, and I think will match Fat Tire pretty well.

I primed the beer with 3/4 cup of priming sugar, and bottled it. The result was 14 12-oz. bottles, 11 18-oz. bottles, and 7 22-oz. bottles.

Fake Tire Amber Ale 1.2

One of my favorite beers from last year was my Fake Tire Amber Ale (a clone of Fat Tire). The first batch was so good that I brewed it again! The second batch was largely the same as the first, except I used pelletized hops instead of whole hops. The unfortunate effect was that the beer was slightly more bitter. Thus, I decided to further refine my pelletized recipe for this brew session. Following advice elsewhere, I reduced the overall hops amounts by 10 percent, to compensate for the greater surface area (and contribution of bitterness) from the pellets versus the whole cones. I also changed the yeast, from Wyeast 1272 (American Ale II) to White Labs WLP051 (California V Ale), based on what was available at my local homebrew supply shop.

The result is:

  • 5 pounds plain extra-light DME
  • 0.5 lb Munich light malt
  • 0.5 lb Carapils malt
  • 0.5 lb biscuit malt
  • 0.5 lb crystal malt (20° Lovibond)
  • 0.5 lb crystal malt (40° Lovibond)
  • 1.0 oz chocolate malt
  • 0.9 oz. Cascade hops (60 minutes boil)
  • 0.9 oz. Mt. Hood hops (5 minutes boil)
  • 1 tsp. Irish moss (15 minutes boil)
  • White Labs WLP051 Yeast (California V Ale)
Steps
  • I heated 3.5 gallons of tap water to 154° F, and steeped the grains for 45 minutes. Then, I sparged the grains with 0.5 gallons of tap water at 154°.
  • After bringing the mixture to a boil, I turned off the heat and added the malt. I brought it back to a boil, and threw in the Cascade hops.
  • After boiling for 45 minutes, I added 1 tsp. of Spanish moss.
  • After boiling for another 12 minutes (for 57 minutes total boil), I added the Mt. Hood hops.
  • After 3 more minutes (60 minutes total of boiling), I cooled the wort with my chiller, added cold tap water to a total of 4.5 gallons, and pitched the yeast. Pitching temperature was 76° F, and starting gravity was measured at 1.052 (gravity is recalculated to what it would be at 60° F).

IPA and Amber Ale Updates

A few odds-and-ends. . .

This brew was transferred to the secondary on Sunday, February 12, after 8 days in the primary. The gravity at that time was 1.012, down from 1.050 (giving a current ABV of 5.0%). Unlike the first version of this recipe, I did not get an estery aroma out of the primary fermenter - maybe because I fermented at a slightly lower temperature?

The original version of this recipe has conditioned very, very nicely, and as a result I've been drinking it with some regularity. A few weeks back a friend and I did a blind taste-test with the commercial version of Fat Tire. My version is a little less bitter and just a shade darker. Otherwise, they're quite similar. In some ways, I prefer my slightly less hoppy version; it will be interesting to see how version 1.1 varies.

On January 5, I transferred this IPA over to the secondary fermenter; the gravity at that time was 1.024. On January 19, I added 2 oz. of Northern Brewer hops pellets directly to the fermenter (no hop bag). I let this mixture dry-hop until February 12, when I bottled the brew. The final gravity was 1.021, yielding an ABV of 6.7%. I ended up with four 22-oz. bottles, 21 pint bottles, and 13 12-oz. bottles.

This is a solid IPA. It has a subtle hop aroma, and a clear, coppery hue. The flavor is appropriately bitter, but perhaps the only fault is that it is a shade on the sweet side.

Time is growing short, before the temperatures inch their way up too far. My summer ale is in the primary fermenter now, and I'm considering doing a wheat beer to close out the season. If that happens, it will have to be next weekend. Finally, I have five pounds of honey that I'm planning on turning into mead. My understanding is that you can ferment mead at a reasonably high temperature, so that will be my "anchor" for Winter 2012.

Fake Tire Amber Ale 1.1

My first batch of Fake Tire Amber Ale is amazing. In my (non-humble) opinion, it's probably one of the best recipes I've done yet. A genuinely biscuit-ish flavor (just like Fat Tire!), clear appearance, and nice head combine deliciously. The downside of this is that I have finished most of the batch. Watching my dwindling supply, I decided to take action and brew up another batch today. I made some small changes, largely on account of what was available for ingredients.

Nothing major - instead of whole hops, I used hops pellets. This presumably has the effect of upping the hops utilization a little bit, but according to BeerSmith it's not a major amount. 21.9 IBU's versus 24.1 IBU's for the whole and pellet hops, respectively. Given the margin of error in IBU measurements for hops, as well as the margin of error inherent to home brewing, I decided not to mess with the recipe.

The only other major variation was that I topped up to just a hair under 5 gallons, with a starting gravity of 1.050. I presume the larger amount of water was needed to get close to last time's gravity (1.051) because I decanted a little more of my wort into the brewing bucket than I did previously.

In any case, I will be curious to see how this one turns out!

Fake Tire Amber Ale

I've always liked Fat Tire (from New Belgium Brewing), and have previously found clone recipes to be a good way to experiment with various styles and flavors. Thus, tonight's brew was modeled after two different Fat Tire recipes I found kicking around the Internet. These are followed reasonably closely, except for the hops - I used what I had on hand, so this will almost certainly modify the resultant into something Fat Tire-ish rather than a spot-on Fat Tire (if such a thing is genuinely possible). Thus, I'm calling this batch. . .

  • 5 pounds plain extra-light DME
  • 0.5 lb Munich light malt
  • 0.5 lb Carapils malt
  • 0.5 lb biscuit malt
  • 0.5 lb crystal malt (20° Lovibond)
  • 0.5 lb crystal malt (40° Lovibond)
  • 1.0 oz chocolate malt
  • 1.0 oz. Cascade hops (60 minutes boil)
  • 1.0 oz. Mt. Hood hops (5 minutes boil)
  • 1 tsp. Irish moss (15 minutes boil)
  • Wyeast 1272 (American Ale II)

Steps

  • I heated 3.5 gallons of tap water to 154° F (usually hovering around 156° to 158°), and steeped the grains for 45 minutes. Then, I sparged the grains with 0.5 gallons of tap water at 154°.
  • After bringing the mixture to a boil, I turned off the heat and added the malt. I brought it back to a boil, and threw in the Cascade hops.
  • After boiling for 45 minutes, I added 1 tsp. of Spanish moss.
  • After boiling for another 10 minutes (for 55 minutes total boil), I added the Mt. Hood hops.
  • After 5 more minutes (60 minutes total of boiling), I cooled the wort with my chiller, added cold tap water to a total of 4.5 gallons, and pitched the yeast. Pitching temperature was 74° F, and starting gravity was measured at 1.052. The wort is a nice amber color (as befits an amber ale).

As I refined the recipe, I played around with some calculators for IBU and starting gravity. I got an estimated boil gravity (4 gallon boil) of 1.077; with a top-up to 5 gallons, this gives an estimated IBU of 20.7 and estimated starting gravity of 1.061. My actual starting gravity was a little lower, at 1.052. Part of this discrepancy could be the sludge I left in the bottom of the brew pot, and the other could just be errors in the brew calculator.

New Belgium officially gives an "OG" of 12.6 and an "FG" of 2.2 for Fat Tire, which I think is on the Brix scale (even if not stated). This translates to 1.051 and 1.009. Thus, my original gravity is quite close! We'll see if this comparability is maintained through fermentation. (as a side-note, they measure 18.5 IBU and 5.2% ABV, too)

I've never fermented with American Ale II before, so I'm curious to see how it works out. Judging by the Wyeast website, this should be a nice little strain.
